At SANABRA, we believe that exceptional cava begins in the vineyard and is perfected through time-honored traditions and meticulous attention to detail. Our process combines traditional techniques with artisanal craftsmanship to create cavas of remarkable character and quality.
Our Artisanal Process
Selection of Grapes
Our journey begins with the careful selection of grapes. We cultivate traditional Catalan varieties—Macabeo, Xarel·lo, and Parellada. These are carefully selected to ensure the perfect balance in every bottle.


Traditional Method
We follow the traditional method (Método Tradicional) for creating our cava, the same process used for centuries to create the finest sparkling wines. This artisanal approach ensures the highest quality and most authentic expression of our terroir.
For our cavas, we use ensure a minimum aging of 18 months to preserve the unique flavors and characteristics of our grapes. This ensures a fine and persistence bubbles, adding smoothness and elegance.
Aging and Maturation
Our cavas age on the lees for a minimum of 18 months, developing complexity, depth, and the characteristic brioche notes. This extended aging period exceeds the standard requirements and contributes to the exceptional quality of our cava.
Each bottle of Sanabria Cava matures in our underground cellars under optimal temperature and humidity conditions. This prolonged aging imparts depth and complexity to every sip.
